Easter time spells chocolate for kids. But there are plenty of Easter eggs to go around, so why not take a little time out on the Easter weekend to make this chocolate mousse with your kids?

It's very easy and very tasty. Use organic ingredients where you can. Beware: The recipe only serves four.

What you need:

  • 300g milk chocolate, broken up

  • 50ml warm milk

  • 30ml butter

  • 2 free-range eggs, separated

  • 2 tbs sugar

  • 250ml cream
  • Instructions:

    Melt the chocolate in the warm milk in a large bowl over a small saucepan of hot, but not boiling, water.

    Add the butter in small blocks, stirring until it has melted then remove the bowl from heat. The mixture should look silky.

    While the chocolate is melting, in a separate bowl, whip the egg whites with an electric beater until the white forms stiff points.

    In a separate bowl, beat the sugar and egg yolks with an electric beater until light and pale.

    Beat egg and sugar mixture into the melted chocolate mixture. Fold the cream and the egg whites into the cooled chocolate mixture.

    Pour into four dessert glasses or one large bowl and leave to cool in the fridge for about an hour.

    Tip: You can use white chocolate or for a more grown up version use dark chocolate.
