This meal for kids is a different take on baked beans on toast. It's super healthy so it might be difficult to get them to eat it at first, but once they've tasted it there's no going back.

This recipe will feed four hungry kids:

Chickpeas on toast

Ingredients:

  • 8 slices of wholewheat bread

  • 1 can of chickpeas, drained

  • 2 cans Italian chopped tomatoes

  • 1 onion diced (optional)

  • 1 pinch fresh chopped basil

  • 1 tbs extra virgin olive oil
  • Instructions:

    In a thick bottomed saucepan fry the onions, tomatoes and basil in the olive oil.

    Mix in the chickpeas.

    Remove from the heat.

    Toast the bread and top with tomato and chickpea mixtures.

    Serve immediately.
