Muesli pie is perfect for those days when you and your kids have to have breakfast on the run in the car on the way to school.
You can make it a few days before and then keep it in airtight containers in the fridge so you can just grab some when rushing out the door.
Muesli pie has a lot of fibre so it's essential you get your kids to drink lots of water for it to work effectively.

Preheat the oven to 180?C and lightly grease a loose-based cake pan or flan ring, using a paper towel dipped into oil or spraying the pan with non-stick spray.
Combine all the dry ingredients, including the dried fruits and nuts, in a large mixing bowl.
In another large mixing bowl, beat the eggs and add the grated apples, yoghurt and vanilla essence. Mix well.
Add the egg and yoghurt mixture to the dry ingredients and mix well. Make sure all the ingredients have been moistened.
Spoon the mixture into the prepared cake pan and smooth the top with the back of a spoon.
Bake for 40 minutes until firm and golden brown. Remove to a cooling rack and allow to cool in the pan.
Remove from the pan and cut into 16 wedges.
