"My Gran, who turned a grand old 90 this year, used to make this years ago," says Sarah McKerron, co-author of Savvy Kids Menus. "Her recipe required lots of TLC and I have simplified her original. It's just as good and very moreish."

Great gran's rice pudding

What you need:

  • 250g white long grained rice

  • 25g unsalted butter

  • 1? litres milk

  • 6 tbsp castor sugar

  • Pinch fresh nutmeg

  • 2 free range eggs

  • Pinch of salt
  • Instructions:

    Preheat the oven to 150?C. Grease an ovenproof dish. Add the rice with enough water to cover it and bake for 10 minutes.

    Remove from heat and stir in the sugar, and half the milk, egg, nutmeg, salt and bake for 60 minutes. Remove from heat, stir in the balance of the milk and bake for a further 30 - 60 minutes, until the rice pudding is a thick, creamy mixture.

    Tip: Stir the rice from time to time. This is best served with a spoonful of strawberry jam in the middle.
