'Sustained energy for kids', is a book dedicated to yummy food that your kids (and the rest of your family) will love, but also houses recipes that will give your kids the energy they need for a productive day.

As registered dieticians, the authors say the following about the Peanut loaf recipe:

  • Although the fat content per slice of this recipe is higher than we would like, the type of fat is mainly monosaturated, which makes it acceptable.
  • Monosaturated fats are good for brain functioning and development and also protects the heart.
  • Once slice of this loaf can be used as starch in a meal. The high GI makes it less suitable as a snack.

Peanut loaf recipe:

Ingredients:

  • 375ml self-raising flour

  • ? tsp salt

  • 10ml baking powder

  • 250ml oat bran

  • 1 medium apple, peeled and grated

  • 30ml raw honey

  • 125ml soft brown sugar

  • 30ml canola oil

  • 105ml peanut butter

  • 3 eggs (Omega rich)

  • 60ml skimmed milk

  • 15ml salted peanuts, coarsely chopped
  • Instructions:

    Preheat oven to 160°C and grease a 23cm x 11cm x 7cm loaf pan with non-stick spray.

    Sift the self-raising flour, salt and baking powder together in a bowl.

    Add the oat bran and grated apple to the flour mixture and fold in.

    Place the raw honey, brown sugar and oil in a saucepan and heat slowly until the sugar is dissolved. Remove from the stove and add the peanut butter mixture as well.

    Beat the eggs and milk together in a separate bowl.

    Add the dry ingredients together with the peanut butter, sugar and oil mixture and mix well.

    Spoon the mixture into the prepared pan and spread it out evenly. Sprinkle the coarse chopped nuts on top.

    Bake for one hour, or until the crust is golden brown. Check with a skewer if comes out clean.

    Cool in the baking pan for 15 minutes, before turning out the loaf.
