How to make Hot Cross buns

Ingredients:

Dough:
4x250ml cake flour
10 ml salt
10g instant yeast
80ml sugar
10ml ground cinnamon
10ml mixed spice
60g melted butter
200ml warm milk
1 extra large egg
250ml sultanas

Crosses:
60ml cake flour
15ml oil
Water to make paste

Glaze:
100ml water
50ml sugar
3ml ground cinnamon
