Quite a mouthful, this description, is it not? Well I've discovered over the years that when it comes to creative descriptions nobody beats estate agents and chefs, so this is my way of poking a bit of fun at all those drizzle, jus, and infusion chefs out there.

For you see, my 'mango fruit salad trifle' is nowhere near as fancy as it may sound. But it's good, tasty, honest food that doesn't cost a fortune and is easy to make.

I usually put off making and serving fruit salad for warmer summer months, but there is such a lot of goodness in fresh fruit that we really should eat lots of it in winter to keep those nasty cold and flu bugs at bay.

My favourite fruit salads are ones with a 'theme' fruit; the one whose taste slightly dominates the rest of the salad and it can really be any fruit of your choice.

Watermelon, strawberries and plums are good 'theme' tastes, but for today's fruity concoction I have chosen mango as the dominant fruit.

To make this tasty fruit salad you need:

  • 3 bananas

  • 3 pears, peeled, cored and chunked

  • 2 apples

  • 2 sweet naartjies, peeled, broken into segments

  • 2 cups of berries of your choice

  • 2 large mangos, peeled and sliced into chunks

  • 250ml Greek yoghurt

  • 120ml crème fraîche

  • 2 tablespoon honey

  • 1 teaspoon Chinese five spice (or cinnamon powder)

  • 1 wine glass of berry juice

  • 1 cup treacle sugar

  • Optional: A tot measure of brandy, sherry, port or jerepigo
  • Instructions:

    Mix the berry juice, honey and five spice together well (and the booze, if using).

    Mix the yoghurt and crème fraîche together well.

    Spoon all the fruit into a bowl and add the berry juice mix.

    Top the fruit with the yoghurt and crème fraîche mix.

    Sprinkle with treacle sugar and refrigerate for one to two hours before serving.
