I have been a chocoholic for as long as I can remember. Many experts reckon it is an addictive substance and I’m inclined to agree because few things in life is as comforting as chunk of dreamy chocolate – to say nothing about a rich chocolate dessert.
Today’s main ingredient is, guess what, chocolate!
It is a very simple dessert and one much loved on the island of Madeira where it originated and where the locals call it Mousse de chocolate Viriato.
What I like about it is the subtle citrus flavour the addition of freshly-squeezed orange juice gives to the chocolate. It’s also quick and easy to make.
So here goes. For this Portuguese mousse you require:
Ingredients
1 large slab of ordinary brown chocolate (not the black, bitter variety)
1 tablespoon butter
The juice of one orange (or good quality fresh orange juice) – about ˝ cup
5 eggs
1 cup of castor sugar
Method
In a saucepan melt the chocolate over low heat and add the butter
Stir until dissolved and add the orange juice and stir in
Remove chocolate from the heat
Separate the eggs, beat the yolks and stir slowly into the chocolate
Beat the egg whites until stiff, fold in the sugar and beat some more
Add the chocolate to the egg white
Stir gently to blend all the ingredients
Pour into a large dish or individual serving bowls and chill well before serving
Serve plain or with fresh strawberries and a dollop of fresh cream
