This is a particularly tasty dish, easy to make and just perfect for a light summer main course ? and it's a good solution for carnivores who have to cater for their leaf and veggie-munching guests.
Butternut is a regular South African favourite and most restaurants usually feature it as a soup option or as a side dish, but few actually offer it as a main course.
It's quite an unusual dish and different enough to delight even dedicated meat eaters.
I usually serve it with a big green salad and crusty fresh bread.
For this delicious butternut and cheese combination you need:
Ingredients
1 butternut, peeled and diced
2 tablespoons butter or olive oil
1 cup Feta cheese sliced into cubes
4 spring onions, thinly chopped
3 eggs
250 ml buttermilk
Salt and black pepper
1 teaspoon brown sugar
Method
Steam the butternut until just soft strain and spoon into an oven proof casserole dish
Sprinkle with salt and lots of black pepper
Add butter (or olive oil), spring onions and Feta cheese
Beat the eggs with the buttermilk and pour over the vegetables
Mix well
Place in an oven pre-heated to 180 deg C and bake until puffy and brown
Serve piping hot straight from the oven to the table
