This is one of those quick an delicious chicken meals that you can throw together and enjoy in less than an hour — great for busy Moms, lazy lads and the perfect solution for unexpected guests.
I am not big on having a freezer stacked with all sorts of fancies because I much prefer to shop for fresh ingredients on a daily basis, with one or two exceptions, chicken being one of them.
In my refrigerator at home you will always find chicken breasts, thighs and wings because you can conjure up a million things with chicken portions, a vegetable or two, some herbs or a couple of hot spices for those days when you just run out of time.
And chicken need never be just boring old chicken, as this recipe illustrates yet again. This dish is tasty and full of flavour and it encourages you to add additional flavours and ingredients of your own choice.
To make enough for four you need;
Ingredients
4 chicken breasts, skin on
2 sprigs of rosemary
2 cloves of garlic, peeled and finely chopped
1 onion, quartered
2 courgettes, chopped into pieces
1 aubergine, sliced into chunks
1 red or yellow pepper, sliced into pieces
4 tomatoes, quartered
4 tablespoons olive oil
Coarse salt and black pepper
6 black olives, halved and toned removed
4 peppadews, coarsely chopped
Method
In a shallow roasting pan or dish mix all the solid ingredients except for the chicken and toss well with two tablespoons of oil
Place chicken breasts on top of the vegetables and brush with one tablespoon olive oil
Sprinkle well with salt and pepper
Place the dish in an oven pre-heated to 180 deg C and roast uncovered until the vegetables are done and the chicken is beautifully browned (about 30-40 minutes)
Sprinkle with last tablespoon of olive oil and scatter peppadews and olive halves just before serving
Serve on its own or with chunky bread, rice or potatoes
