The distinct flavour of fresh coriander is what gives this dish a very special summer flare and although we are using pork fillet, chicken breast fillets substitute well.
New-age pork is both tasty and healthy because of its lowered fat content and pork fillet is one of those lovely cuts of meat that can be used in various dishes and also tastes great, lightly grilled over hot coals.
I like a bit of extra bite and usually add a chopped fresh chilli or two to the sauce but if your guests have delicate pallets you can leave it out. It won't make a big difference to the final flavour of the sauce.
For today's recipe we will be using curry leaves, but these can be substituted with bay leaves.
To serve four portions of pork fillet in this tangy, tasty sauce you need:
Ingredients
2 x 500g pork fillets cut into 2 cm slices
1 cup flour
3 tablespoons soft butter
3 cloves of garlic, lightly crushed and finely chopped
1 cup of coarsely chopped fresh coriander leaf
1-2 fresh chilli, seeds removed and finely chopped
4-6 curry leaves
? cup dry white wine
1/3 cup white wine vinegar
1 tablespoon brown sugar
Method
Pour the flour into a flat bowl or large plate and lightly coat the pork slices (discard the left-over flour).
In a saucepan melt the butter and fry the pork slices for two minutes on each side, then remove from pan and set aside.
Add the garlic and chilli to the same pan as the pork was cooked and stir fry for two minutes.
Add the wine, vinegar, sugar, curry leaf and half the fresh coriander, bring to the boil and reduce to a simmer.
When the liquid has reduced slightly add the pork slices to the sauce and cook over medium heat for two minutes.
Add the remaining fresh coriander, stir through and serve immediately.
This pork goes well with steamed rice, new potatoes and oven roasted vegetables.
Garnish with a fresh coriander or mint leaves.
